Citrus Cordial Recipe
4-5 Citrus Fruits  (Grapefruit, Lemon, Orange, Lime, Pomelo, Kumquat) in any combination to produce 2 cups of citrus juice
* the basic combination of 1 cup Grapefruit or Orange (sweet citrus) and 1 cup Lemon or Lime (tart citrus) yields the most versatile result.
1 cup Sugar

Wash the citrus with warm water and towel dry. Zest the peels and reserve. Squeeze citrus and combine 2 cups of juice with 1 cup of sugar and slowly heat until sugar is dissolved. Let cool to room temperature and add the zest of the citrus to the cordial and stir. Refrigerate overnight then strain out zest. Store in a glass jar for up to 6 months in the refrigerator. Use the cordial for all kinds of recipes… try a splash in a G+T, Paloma, or Salty Dog!
